Doppio Zero Flour
The flour that we use is a very finely ground flour with a lower gluten content than most flours, which gives our dough its airy, fluffy quality. We also use a Mother yeast when making our dough. The mother is extremely important in giving our dough its consistent flavor and taste. The mother is a living organism that not only feeds on water and flour, but also breathes the air from the environment it lives in.
Extra Virgin Italian Olive Oil
Our extra virgin olive oil comes from the beautiful town of Sorrento, so beautiful that it is named in songs and poems. Our EVOO is DOP certified and it is produced by a small oil maker, the Gargiulo family. The olive trees are spread along the gulf of Salerno that face Capri, the Island of Love.
San Marzano Tomatoes
Our GustaRosso DOP-certified San Marzano tomatoes are considered the best in the world, grown in the volcanic soil at the base of Mount Vesuvius. They have a deep red color and very low acidity for an all-around great taste. Combined with our Sale Dolce di Cervia, or sauce is simplistic yet incredibly flavorful.
